Ingredients1.2 kg chicken fillet (about 2.6 lbs)
5 chicken eggs
100 g sour cream
1 chopped onion
2 chopped tomatoes
250 g hard mozzarella, grated
Vegetable oil for cooking
Salt, dried ground garlic, chicken seasoning and dried ground sweet paprika (to taste)
Instructions
Prepare the chicken: Generously season the chicken breasts with salt, dried ground garlic, chicken seasoning, and paprika.
Brown the bird: Heat a little vegetable oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook until golden brown on all sides. This should take about 5 to 7 minutes per side.
The egg trio: In a separate bowl, whisk together the 5 eggs, sour cream, and a pinch of salt.
Tomato: Once golden brown, remove from the pan and set aside. Add the chopped onion to the pan and cook until softened, about 3 minutes. Then add the crushed tomatoes and cook for another 2 minutes, letting them release their juices.
The big assembly: Return the browned chicken breasts to the pan with the tomatoes and onions. Pour the egg mixture evenly over the chicken and vegetables.
Cheese Nirvana: Preheat the oven to 180°C (356°F). Sprinkle with shredded mozzarella.
Cooking Fun: Bake the dish in the preheated oven for 30 minutes. This allows the eggs to set and the cheese to become beautifully melted and golden.
Serve and Enjoy: Remove the dish from the oven and let it cool slightly before serving. This chicken-inspired dish is perfect on its own or served with rice, roasted vegetables or a simple salad.
So ditch the complicated recipes and give this chicken dish a try. With its ease of preparation and burst of flavour, it’s sure to become a new favourite in your kitchen!
